And boy do I ever want a nap! It seems like this time around in our Whole30 journey the fatigue has really been impactful. One reason for that in my case is that I am training for a 5K in addition to doing the Reset. So a lot of my resouces today have been going toward recovery from that. My run on day 6 was a struggle, I am not going to lie, but I did meet my goal of 2 miles. As a just reward for day 6’s run was a very nice Whole30 meal including…steak. And not just any old tenderloin, but an organically grass-fed beef tenderloin.
In addition to the steak my wife whipped up some mashers, which actually are a mix of potatoes and cauliflower. That is one of the only ways I will eat the hated white vegetable. Its one of the dreaded trio of veggies for me: broccoli, brussels sprouts, and cauliflower. Since I have such disdain for them my wife comes up with creative ways to get me to ingest them. She’s pretty good at it, as evidenced by this recipe for brussel sprouts and this one for broccoli soup.
Hopefully, things will improve tomorrow and both she and I will start to gain some of that energy that we know is coming from making this healthy lifestyle choice. God Bless!
