So yesterday on our day 2 I busted my wife. No harm, no foul, this is tough. Especially, giving up things that are as much as a routine as anything else. Her coffee routine is pretty well ingrained and coffee creamer and sweetener is the toughest “change” we have both had to make. I was reading a recipe the other day of a Whole30 approved recipe. The person had yet to complete the program. We have a friend who only could do 9 days. The important thing is trying and the willingness to make changes for the betterment of your health.
As for me I did okay. Still ended the day with a bit of a headache but I was able to get some spring cleaning done on our porch and in the garage. Breakfast was almost a repeat of yesterday but with the sweet potato, banana, onion leftovers from the night before. Had a good snack/lunch of banana with almond butter and leftover chicken with guacamole. For dinner we had leftover chicken, zucchini and carrots as well as a salad.
The challenge is going to be breakfast for the work week. The key, they tell you, is to prep ahead of time. So my wife made me this casserole. Looks good doesn’t it? God Bless.
